With only two ingredients, you can make perfectly creamy yogurt at home. It's super simple and so good for you! All you need is some good quality milk, about half a cup of plain yogurt to use as a starter culture, and a little bit of patience. It's that easy!
Add milk to a big pot. Bring to a boil. Watch very carefully as the milk starts to rise quickly once boiling.
Cool the milk down to 108 Fahrenheit (42 Celsius), use a candy or regular food thermometer. To speed up the process, put the whole pot in a cold or even icy water bath.
Prep Yogurt Glasses
While waiting, put the starter yogurt into a big bowl. Set aside.
Prepare your yogurt glasses. If you want just plain yogurt, leave them empty. If you like to add a flavor, put some fruit puree or chocolate powder in the bottom of the glasses. ***
Fill Milk into Yogurt Glasses
Once the milk is cooled down to 108 °F, pour about a quarter of it into the bowl with the yogurt starter and whisk it up. Add the rest of the milk to the milk-starter mixture and mix it for a few seconds.
Pour the milk mixture carefully into the prepared yogurt glasses.
Put the glasses carefully into the yogurt maker. Put the lid on the yogurt maker and let the glasses rest for 10-12 hours.
Once they are done, put the individual lids on the yogurt glasses and put them in the refrigerator to cool. It's best to let them chill overnight.
Notes
*I like to use whole milk; the yogurt gets thicker and creamier that way. But if you prefer low-fat milk, make sure you leave the glasses in the yogurt maker for at least 12 hours to achieve a thick yogurt. ** Plain Greek yogurt works great, but you can use any plain yogurt, though a good quality yogurt is preferred!***For fruit puree: Add 1 cup fruit of your choice into a small saucepan. Add 1Tbsp of water to the fruit. Bring it to a boil and let the fruit simmer until fruit juice has reduced and thickened up, about 5-10min. Fill the desired amount into each yogurt glass.***For chocolate yogurt: Add 1Tbsp of chocolate powder of your choice into the glass before you pour the milk in.➙ I bought my yogurt maker about five years ago, and for some reason, I can't seem to find it online anymore. It still works wonderfully. Here is a link to a Yogurt Maker I know is excellent, too. Since it only has the portion glasses and no big jar like mine does, you'd need to half my recipe.
