These easy Strawberry Blondies are what Summer dessert dreams are made of - chewy and sweet, and every bite bursts with fresh strawberry flavor and a hint of lemon. They are made with simple pantry staples, making them the perfect treat that comes together quickly!
1tbspStrawberry pureeyou will need about 2 large Strawberries
120gPowdered sugar sifted120g should be the unsifted weight
1tbspLemon juiceor just enough to thin the glaze to a spreadable consistency
Instructions
Batter:
Preheat the oven to 350°F or 180°C. Line an 8x8 baking dish with parchment paper. I recommend letting the parchment paper slightly hang over the sides for easy removal after baking. Set aside.
Wash and dice the strawberries into small cubes. Set aside.
In a separate bowl, combine the flour, salt, and baking powder and set aside as well.
In a microwave-safe bowl, carefully melt the butter on your microwave's soften/melt setting. Or you can add the butter to a medium-sized pan and melt it on the stove over low heat. Once melted, add the brown sugar, lemon juice, and vanilla extract (or scrape out the seeds of one vanilla bean).
Whisk in the egg until fully incorporated. A regular whisk works great!
Add the flour mixture to the wet ingredients and mix until combined.
Then put in the cut-up strawberries and carefully fold them in.
Pour the batter into the lined baking dish, and with a rubber spatula, level it.
Bake for 25-30 minutes. The middle might still be a little soft, but that’s ok if the edges are golden brown.
Let them cool before removing from the pan.
Glaze:
Once completely cooled, take the Strawberry Blondies out of the baking dish.
Puree the strawberries with a food blender. Strain the puree through a strainer to get 1 Tbsp of puree. A strainer will catch all the little seeds from the strawberries and leave you with a smooth sauce.
Mix the fruit sauce with powdered sugar and lemon juice. I like to use a hand whisk to do the mixing. The glaze should be a little runny but not too much. If your glaze is too thin, add more powdered sugar. If it is too thick, add some more lemon juice. It should have the consistency of corn syrup.
Pour the glaze over the Strawberry Blondies and spread it over the entire surface.
Let the glaze set before cutting into the Blondies. This will give you a nice cut and even lines.
Cut them into 2x2 inch squares and serve!
Notes
Tips:➙ Make sure that the butter doesn't get too hot when you melt it. But, if it happens and it gets hot, let it cool down a bit before you continue adding the ingredients to it. ➙ Store these Strawberry Blondies in an airtight container in the refrigerator. You can enjoy them for up to 5 days.
