These Homemade Chocolate Baileys Cupcakes are perfect! An easy and moist chocolate cake topped with Swiss Meringue Buttercream and a Baileys truffle – a cupcake with a little kick. Serve it for a St. Patrick’s Day party or any occasion.

It is March already, and St. Patrick’s day is approaching. Even though I don’t and never have celebrated this Irish holiday, I wanted to create a St. Patrick’s Day-worthy dessert for my readers. Because I know a lot of people like the day the little Leprechaun appears. 

In Switzerland, St. Patrick’s Day is not well-known or celebrated. However, I first started noticing this holiday when I lived in Chicago. Chicagoans go all out! They have a parade going through downtown, and did you know that they add dye to the Chicago River to turn it green? They use about 40 pounds of vegetable-based powder dye to turn it green for a few days.

Boats drop the dye into the river in the early morning hours of St. Patrick’s Day before the big parade begins. If you have never witnessed this big event, I highly recommend looking it up or even planning a trip to the Windy City during this time of year! It is truly a fantastic experience!

Chocolate & Baileys

I don’t care much for alcohol and rarely drink it. But Baileys in a dessert gives it this extra flavor that is so good. Especially Baileys mixed with chocolate – a perfect match, wouldn’t you agree? They go exceptionally well together!

The chocolate cake is a perfectly moist sponge that is easy and quick to make. I added some Baileys into the batter, and it shines through beautifully in the end product and marries incredibly well with the Baileys Buttercream.

Baileys Truffles

You might think that one would buy something as fancy as Baileys Truffles at a gourmet chocolate store. But did you know they are easy to make at home, with just a few simple ingredients? 

These Truffles are not a must to make for these Chocolate Baileys Cupcakes, but they certainly add a special touch. So whether you decide to add them or not, you will have an incredible dessert either way!

How to make them:
  1. Break the chocolate into small pieces and place them into a medium-sized mixing bowl.
  2. Add the heavy whipping cream to a saucepan and bring it to a light boil.
  3. Once the heavy cream is boiling, pour it over the chocolate pieces. Let it sit for 1-2 minutes until the chocolate melts, then mix with a whisk until fully incorporated.
  4. Then add the butter and mix it in until melted.
  5. Next, carefully fold the Baileys into the chocolate ganache – mix well.
  6. Cover the bowl with plastic wrap. Place the wrap directly onto the chocolate ganache to avoid a skin from forming. 
  7. Put the bowl in the refrigerator overnight or for at least 4 hours to give it time to set and harden.
  8. Once the baileys ganache has set, take it out of the refrigerator, and uncover it.
  9. Pour some cacao powder into a small bowl or on a plate.
  10. Use a melon scoop or a small spoon to scoop out a uniform amount of baileys ganache to make the truffles.
  11. Roll each piece between your palms until you have a round ball. 
  12. Then place the truffle in the bowl/plate with cacao powder and carefully roll it around until it is fully covered with powder.
  13. Add the truffle to a plate or baking sheet, and repeat until you have used up all the chocolate ganache. Then place the plate/baking sheet back into the refrigerator. 
  14. Once the truffles are hard again, take 2-4 truffles at a time and place them in a sifter. Very carefully shake them around. The excessive cacao powder will come off and leaves the perfect amount on the truffles. 
  15. Set them in the fridge until you need them.

Ingredients
 
 

Baileys Truffles:

  • 180 g Lindt milk chocolate
  • 120 g Heavy whipping cream
  • 1 tbsp Butter
  • 40 g Baileys Irish cream
  • Cacao powder for rolling the truffles in

Chocolate Batter:

  • 200 g Butter
  • 200 g Lindt milk chocolate
  • 100 g Granulated sugar
  • 50 g Dark brown sugar
  • 1 1/2 tsp Vanilla extract
  • 100 g Baileys Irish Cream
  • 5 Egg yolks
  • 80 g Almonds shredded
  • 120 g All-purpose flour
  • 5 Egg whites
  • 1/8 tsp Salt

Baileys Buttercream (find the recipe instructions here):

  • 6 egg whites
  • 400 g Granulated sugar
  • 230 g Butter
  • 4-5 tbsp Baileys Irish cream adjust to your preference

      Chocolate batter:

      • Preheat the oven to 350°F or 180°C and line a muffin tin with cupcake liners.
      • Add the butter, dark chocolate, granulated sugar, dark brown sugar, and vanilla extract to a medium-sized pan and melt it on the stove over low heat. Stirring continuously with a wooden spoon or rubber spatula.
      • Once everything is melted, take the mixture off the heat and let it cool for about 15 minutes.
      • Separate the egg whites from the yolks. Put the egg whites in a medium-sized bowl and set aside.
      • Add the egg yolks, Baileys, shredded almonds, and flour to the melted chocolate mix. Mix with a wooden spoon until well incorporated.
      • Beat the egg whites with a hand mixer (or stand mixer) until stiff peaks form.
      • Carefully fold the stiff egg whites into the chocolate mix using a rubber spatula or a wooden spoon. Be careful not to over-mix; you will lose all the air in the egg whites, and the batter will get runny.
      • Use a cookie scoop and add the batter to the lined muffin tin. Fill the liner to about 3/4 full.
      • Bake for 18-20 minutes.
      • Let the cakes sit at room temperature for 5-10 minutes before taking them out of the muffin tins and onto a cooling rack. Make sure the cupcakes are completely cooled before starting to add the buttercream. Even if they are just slightly warm, the buttercream will melt right off.

        Baileys Swiss Meringue Buttercream:

        • Make the Swiss Meringue Buttercream according to my recipe here. Instead of adding the vanilla extract, add the Baileys Irish cream to it. Depending on how strong you like the Baileys flavor, add between 4-5 tablespoons.
        • If the buttercream starts to split, don’t worry; keep beating it, and it should start to get smooth again. If not, place the bowl into the refrigerator for about 15-20 minutes and then beat it again, and you will have a perfectly smooth topping.

        Decorating the cupcakes:

        • Fill the buttercream into a pastry piping bag with a round tip. Pipe 6-7 dots around the edge of the cake to make it look like flower petals. Then pipe one spiral rosette in the middle.
        • Drizzle the buttercream with homemade caramel (store-bought works as well) and put one Baileys truffle on top.

          Tips:
          ➙ Use a kitchen scale!!!! All my recipes are in metric measurements! Measuring your ingredients with a kitchen scale guarantees you a perfect result!
          ➙ Make the Baileys Truffles the day before to save some time!
          ➙ They stay good for up to 3 days in the refrigerator. 
          ➙ If you want to freeze them, place the cupcakes in an airtight container and keep them in the freezer for up to two months.
