Strawberry Blondies
These easy Strawberry Blondies are what Summer dessert dreams are made of – chewy and sweet, and every bite bursts with fresh strawberry flavor and a hint of lemon. They are made with simple pantry staples, making them the perfect treat that comes together quickly!
We skipped Spring here in Nevada and, from one day to the other, are now in summer mode. I am not ready for the heat, but I am excited about all the summer fruit that comes with warmer temperatures.
Because there are days when I crave something sweet that doesn’t contain chocolate. Can you believe that? 😉

My family loves strawberries, and we always have some in the house during summer. This Strawberry Blondies recipe is perfect to use this fresh summer fruit in. It is simple and quick and needs ingredients you likely already have. Bake some for your next party, or make a batch for your family for a yummy afternoon treat.

Strawberries
When it comes to fruit, I almost always use fresh, especially strawberries. Because once the strawberries are frozen and thawed, they turn mushy and watery. I highly recommend using fresh berries in this recipe.
These blondies work great with other fruit, too. So feel free to experiment and make them with blueberries or raspberries; you can also use peaches, plums, or cherries, or try to mix the strawberries with rhubarb when they are in season! The options are plentiful!
Finishing touches
When these Strawberry Blondies come out of the oven, they look pretty plain and boring, in my opinion. That’s why I like to glaze them with a simple sugar glazer made of powdered sugar and fruit sauce. This will give these blondies a pretty pink color and some extra pizzazz.
How to make the glaze
Puree the strawberries with a food blender. Strain the puree through a small strainer to get 1
Tbsp of puree. A strainer will catch all the little seeds from the strawberries and leave you with a smooth sauce.
Mix the fruit sauce with powdered sugar and lemon juice. I like to use a hand whisk to do the mixing. The glaze should be a little runny but not too much. If your glaze is too thin, add more powdered sugar. If it is too thick, add some more lemon juice. It should have about the consistency of corn syrup.

Strawberry Blondies
Ingredients
Batter:
- 230 g Butter
- 120 g Dark brown sugar
- 2 tbsp Lemon juice freshly squeezed
- 2 tsp Vanilla extract or 1 vanilla bean
- 1 Egg
- 320 g All-purpose flour
- 1/2 tsp Salt
- 1/2 tsp Baking powder
- 250 g Fresh strawberries washed and diced
Glaze:
- 1 tbsp Strawberry puree you will need about 2 large Strawberries
- 120 g Powdered sugar sifted 120g should be the unsifted weight
- 1 tbsp Lemon juice or just enough to thin the glaze to a spreadable consistency
Instructions
Batter:
- Preheat the oven to 350°F or 180°C. Line an 8×8 baking dish with parchment paper. I recommend letting the parchment paper slightly hang over the sides for easy removal after baking. Set aside.
- Wash and dice the strawberries into small cubes. Set aside.
- In a separate bowl, combine the flour, salt, and baking powder and set aside as well.
- In a microwave-safe bowl, carefully melt the butter on your microwave's soften/melt setting. Or you can add the butter to a medium-sized pan and melt it on the stove over low heat. Once melted, add the brown sugar, lemon juice, and vanilla extract (or scrape out the seeds of one vanilla bean).
- Whisk in the egg until fully incorporated. A regular whisk works great!
- Add the flour mixture to the wet ingredients and mix until combined.
- Then put in the cut-up strawberries and carefully fold them in.
- Pour the batter into the lined baking dish, and with a rubber spatula, level it.
- Bake for 25-30 minutes. The middle might still be a little soft, but that’s ok if the edges are golden brown.
- Let them cool before removing from the pan.
Glaze:
- Once completely cooled, take the Strawberry Blondies out of the baking dish.
- Puree the strawberries with a food blender. Strain the puree through a strainer to get 1 Tbsp of puree. A strainer will catch all the little seeds from the strawberries and leave you with a smooth sauce.
- Mix the fruit sauce with powdered sugar and lemon juice. I like to use a hand whisk to do the mixing. The glaze should be a little runny but not too much. If your glaze is too thin, add more powdered sugar. If it is too thick, add some more lemon juice. It should have the consistency of corn syrup.
- Pour the glaze over the Strawberry Blondies and spread it over the entire surface.
- Let the glaze set before cutting into the Blondies. This will give you a nice cut and even lines.
- Cut them into 2×2 inch squares and serve!
