Lebkuchen – Gingerbread

Super easy and quick Lebkuchen – Gingerbread. The whole house will smell like Christmas as soon as this soft and moist bake comes out of the oven. It’s perfect for breakfast, a snack, or a sweet after-dinner treat.

I’ve been making this yummy holiday bake every year ever since I can remember. You won’t believe how quickly it comes together, and the recipe only asks for a few ingredients you most likely already have in your pantry.

There are other bakes I make every year, Zimtsterne – Cinnamon Star Cookies or Spitzbuben – Linzer Cookies, for example. It has become a tradition at our house, and Christmas would not be complete without them.

Can I make a Gingerbread house with this Lebkuchen?

If you are wondering if it is suitable to make a gingerbread house out of this Lebkuchen, the answer is no! This gingerbread is way too soft (it has more of a cake-like consistency), and you will end up with a collapsed house within no time. You can, however, decorate the individual slices of this bake. Here are some ideas:

Icing: Use the regular icing you would use for a gingerbread house. Or you can make homemade icing; use one egg white and 175g of powdered sugar. Mix them for 5 minutes with a hand mixer or stand mixer – voilà, a great homemade icing that’s so simple and delicious. Feel free to add sprinkles and other decorative elements to it.

Whipped cream: Have you ever tried gingerbread with whipped cream? No? You have to try it! That combination is so perfect! The whipped cream evens out the sweetness of the bread and makes every bite unforgettable.

Butter: Simply spread some soft butter on your slice and enjoy!

Coffee (or hot chocolate milk): This might sound strange to some of you, but maybe you will come to like it. Try to dip your slice in coffee or chocolate milk.

  • Line a baking sheet with parchment paper.
  • Whisk together flour, sugar, gingerbread spice, cacao powder, and baking powder in a large bowl.
  • Add milk and vegetable oil to the dry ingredients. Mix until well combined!

  • Pour the batter on the baking sheet. Then, with a spatula, evenly spread it out.

  • Put it in the cold oven. Turn on the oven to 356°F or 180°C.

  • Bake for 30-40 minutes.
  • Let it cool for half hour before you cut into it.

Notes

It’s important not to preheat your oven before putting the Lebkuchen in.
Wrap leftover Lebkuchen with aluminum foil and keep it out on the counter. Lebkuchen stays good for three days. You can also freeze it for up to two months.
